Parent Supplies: Cookies!

This weekend Joe decided that if I wasn't going to nest, he was going to have to take the initiative to get us prepared. Friday he suggested that we choose some recipes for stuff that we could prepare and freeze. When my response was a murmured, "Uh, yeah," he even got out the cookbook, flipped through the pages and selected three recipes. I think he's looked at the cookbook twice since we've been married. Joe's style of cooking usually involves "a pinch of this, a handful of that, hey, we've got some leftover beans--that will be good in here": definitely not something that requires an ingredient list. The three recipes he selected did all call for sausage, but I was still impressed. I finally said that if our weekend of cooking could include cookies, I was in.

Little did Joe know that the cookies I wanted to make were the monster cookies I'd had at my sister's house last year when I went to visit her and her new baby. I guess it's the baby connection, but I'd been thinking about those cookies for about a month now, and I figured this was my opportunity. See, these cookies require a big bowl to make. A really big bowl. And 18 cups of oatmeal, 3 lbs of peanut butter, 12 eggs...


When I called my sister for the recipe, she told me her husband had cleaned out a tote for them to mix the cookies in because her really big bowl hadn't been big enough. Joe maybe selected a slightly larger tote than was really necessary, but he did end up sacrificing a wooden spoon because it was so hard to stir in all those oats. After five hours of baking, we have three layers of monster cookies in our deep freeze. We also made two pans of lasagna, two pans of enchiladas and some bags of zucchini sausage soup. The cookies were the most fun, though, and they are also delicious. So when this baby finally arrives, you know what we'll feed you if you stop by for a visit. Hope you like oats.
